- 10 oz steak
- 4 tbsp butter
- 2 sprigs of rosemary
- 4 cloves garlic
- coat all sides of steak with salt and pepper. let steak rest at room temperature about 30 minutes.
- wrap in foil and bake on a grate for 45 minutes at 215 F.
- remove steak from oven and rest at room temperature for 20 minutes.
- melt butter in a pan at medium heat.
- add rosemary and garlic.
- place steak in the pan. butter should sizzle.
- sear each side of the steak, while spooning butter over the top, about 1:30 minutes for each side, at very high heat. try to keep rosemary and garlic on top of the steak.
- cut the heat, and pick up the steak with tongs to sear the edges, about 10 seconds for each edge.
- wrap steak in foil and let it rest until cool enough to handle barehanded.
