1. coat all sides of steak with salt and pepper. let steak rest at room temperature about 30 minutes.
  2. wrap in foil and bake on a grate for 45 minutes at 215 F.
  3. remove steak from oven and rest at room temperature for 20 minutes.
  4. melt butter in a pan at medium heat.
  5. add rosemary and garlic.
  6. place steak in the pan. butter should sizzle.
  7. sear each side of the steak, while spooning butter over the top, about 1:30 minutes for each side, at very high heat. try to keep rosemary and garlic on top of the steak.
  8. cut the heat, and pick up the steak with tongs to sear the edges, about 10 seconds for each edge.
  9. wrap steak in foil and let it rest until cool enough to handle barehanded.
